Crab Stuffed Mushrooms
serves 6 as an appetizer
I have made this many times in the oven and you can easily vary the stuffing.
Italian sausage works great, veggies or whatever you like.
Anyway, I thought I would try it in my pizza oven because I am always looking for more things to cook in it!
That said, if you want to do this in the regular oven..375 degrees for 20-25 min should do it!
3/4 lb crab (dungeness will work fine, no need for jumbo lump here since you will be mixing it up)
1/3 cup whipped cream cheese
1/3 cup finely chopped red bell pepper
1/3 cup finely chopped red onion
2 tablespoons chopped fresh dill
zest of 1/2 orange

20 large mushrooms
Mix all ingredients together except mushrooms.
Take the stems off the mushrooms and using a small spoon, hollow out the inside of the mushroom to make room for more stuffing.
Fill each mushroom cap and pile up (it will shrink a bit when cooking).
If using a pizza oven, place on soaked plank, cook 10-15 minutes rotating a few times during cooking until filling is bubbling and browned.
If using a regular oven, place on a sheet pan or glass baking dish and bake for 20-25 minutes until filling is bubbling and browned.
