Lemon Herb Grilled Chicken

This is so lemony and herby. Every time I make it I wonder why I don’t make it more often!?
It goes wonderfully with my Apple, Celery and Snap Pea Salad! Very fresh and summery!

1/3 cup extra virgin olive oil
1 tablespoon lemon zest
3 tablespoons freshly squeezed lemon juice
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped italian parsley
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1/2 teaspoon finely chopped fresh oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cloves garlic, minced
4 boneless, skinless chicken breasts, pounded to 1/2 inch thick

In a small bowl combine all ingredients except chicken. Place chicken breasts in a ziplock bag,
pour in marinade and massage into chicken. Let marinate in refrigerator for up to 2 hours.
Preheat grill to medium high heat. Coat grill with cooking spray. Remove breasts from marinade
and pat dry a bit (just so the oil is not dripping into the flames). Place on grill and cook until
cooked through, about 3 minutes per side. Let rest 5 minutes before serving.
