Salted Bourbon Brownies

makes 25-30 brownies

These brownies are very fudgy and not too sweet AND you can definitely taste the salt
component!
1/4 cup bourbon
1/4 cup semisweet chocolate chips
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa
1 teaspoon baking powder
1 teaspoon coarse salt
1 1/3 cups sugar
6 tablespoons softened unsalted butter
1/2 teaspoon vanilla
2 large eggs

Preheat oven to 350 degrees.

Coat 9x9 inch pan with cooking spray.

Place bourbon in a heatproof container and heat in microwave until almost boiling. Remove from microwave and stir in chocolate chips until dissolved. In a small bowl, combine flour, cocoa, baking powder and salt, stirring with a whisk to break up any clumps. In a large bowl, combine sugar and butter. Beat with a mixer until well combined. Add vanilla and eggs, beat well. Add flour mixture and bourbon mixture, beating at low speed until just combined. Spread batter into the prepared pan. Bake 30 minutes or until a wooden pick inserted in the center comes out clean.
Cool completely in pan on wire rack before cutting.
