Smoky Cheddar Cheese Crackers
makes apprx 30 2”x2” crackers

1 1/4 cups all purpose flour, plus more for dusting the work surface
1 cup grated extra sharp cheddar cheese (but could use any cheese you like)
3/4 teaspoon smoked sweet paprika
1 pinch cayenne
1/2 teaspoon kosher salt
4 tablespoons cold unsalted butter, cut into 1/2 inch pieces
1/2 cup heavy cream
Preheat oven to 400 degrees. Line two baking sheets with parchment paper.
Combine the flour, cheddar, paprika, cayenne and salt in a food processor and pulse to combine
until incorporated. Add the butter and pulse until incorporated. Add the heavy cream and
process until the dough forms a ball.
Place a piece of parchment paper on your work surface and lightly flour. Place the dough on top
and shape roughly into a rectangle. Lightly flour and roll out to about 1/4 inch thick…to about
12”x10”. Cut the dough into squares or rectangles and using an offset spatula carefully transfer
to the prepared baking sheets. (re-roll scraps if necessary..might need to pop in the fridge if
dough gets too warm).Can sprinkle with additional salt, if desired.
Bake until golden brown, apprx 10-12 minutes, rotate sheets halfway during cooking.
