Stuffed Peppadew Peppers
Stuffed Peppadew Peppers “Eyeballs”
makes 20 “eyeballs”

These are a fun halloween appetizer, but can be made any time of the year as a tasty little bite
with drinks! You can prepare up to 30 minutes in advance.

20 peppadew peppers (these are usually found in the antipasto/olive bar of your grocery store)
10 green olives stuffed with pimentos, sliced on the equator into four slices, just use the two
middle slices of each olive
20 small mozzarella balls (usually called bocconcini), a small portion sliced off of each to make
a flat end
2 tablespoons olive oil
2 tablespoons balsamic vinegar
salt/pepper

To assemble, take one peppadew pepper, insert a mozzarella ball flat end up, top with a slice of
olive so that the pimento is the “iris” of the “eyeball”.
In a small bowl, whisk the olive oil, vinegar and bit of salt and pepper.
Arrange the “eyeballs” on a flat plate with a rim and drizzle the dressing over them.
